The circle
ENSO — 円相 — is the circle a Zen calligrapher paints in a single uninterrupted breath. It is a test of concentration, and it is never perfect. The brush runs dry, the line thins, the ends do not quite meet. Japanese aesthetics call that the beauty of imperfection, and it is the closest thing we have to a mission statement.
Our logo is that circle: one flowing stroke, red into gold. Red carries the tradition — the classical technique that governs how fish is cut, how rice is seasoned, how a grill is managed. Gold carries the innovation — the truffle over the salmon carpaccio, the Balinese produce, the cocktail list that reaches past the obvious.
The room
We opened on Jl. Tanah Barak in 2018. Light wood, an open sushi counter, and lighting kept deliberately low. Two floors and 98 seats: 62 on the ground floor — booths, tables for three and four, ten bar stools and three seats at the sushi bar — and 36 upstairs in the tatami room when a table wants privacy.
The most common thing guests write about us is not a dish. It is the quiet. Canggu has no shortage of loud, excellent restaurants; there are fewer places to sit down, talk at a normal volume, and eat carefully for two hours. That is the room we built.
The kitchen
Five in the kitchen, three behind the bar, three on the floor. The kitchen runs dedicated sushi and robata grill stations.
The menu runs to 141 dishes and drinks — soups and salads, nigiri and sashimi, maki, uramaki, gunkan and temaki, tempura, ramen and soba, donburi, bento, and a dessert list worth staying for. The bar keeps signature cocktails, Japanese beer, sake and Japanese whisky.
